Description

Green Zebra is a fun specialty tomato that is well-loved by little gardeners! Tomatoes are about 1-2 inches big and grow in clusters, with each fruit ripening at a different time. This variety is perfect for a long season of harvesting!

Green Zebra tomatoes are ideal for snacking, salads, or making salsa verde. These tomatoes will turn an orange/yellow color when ripe.

Planting

Sow seeds indoors six to eight weeks before the last frost. Place seeds on top of soil and cover with 1/4 of an inch of finely sifted soil.

Transplant to the garden when they are 5–6 inches tall and stocky. Plant deeply into the ground (until only 3–4 inches of the top leaves show). This variety will grow long, vining stalks that need to be supported with heavy posts and tomato wire.

Harvesting

You'll know a tomato plant is ripe by observing the bottom end of the fruit. Harvest when tomatoes are at their peak color and are easily plucked from the vine.

Seed Saving

Harvest a healthy tomato that has ripened on the vine. Wash the tomato, air dry, then cut it in half. Using a small spoon, scoop out the seeds and place them in a small jar. Leave the seeds in the tomato pulp to ferment. Cover the jar and store it in a warm place for three days, opening the jar daily to mix the seeds and pulp. A bit of white fungus may appear, but this is normal.

After three days, fill the jar with water and allow seeds to settle to the bottom. Dump out any water and floating seeds (viable seeds will sink to the bottom). Repeat the process until no seeds float, then drain and place seeds on a paper towel to dry for one week. Store them in a cool, dry place for up to five years.
