Prepare the soil three weeks before the last expected frost. Build up a raised mound in the row (about 8 inches wide) and sow seeds on it, covering them with one quarter inch of very loose soil. Keep the soil moist and cool since carrots cannot tolerate an excess of heat. When seedlings reach 2 inches high, thin to 2-4 inches apart, so they have room to grow. Mulch around carrot tops to keep them tender and prevent weeds.
Baby carrots can be harvested early in the season but some carrots should be allowed to reach their full size. Hold carrot tops at the base and pull them gently out of the ground. To store carrots, twist off tops but do not wash them; store in a cool place or in the refrigerator.
Because carrot varieties will cross pollinate, these plants should be isolated at least 2 miles from other varieties to protect genetic purity. Dig up a few carrots before the first heavy frost, twist off tops, and store in damp sand at 35ºF, making sure the roots don’t touch. Plant them in the garden again in the spring and wait for the plant to flower. When flower pods turn brown and dry, cut them off and allow them to fully dry on a cloth before breaking them apart. Separate seeds from the chaff and store in a cool, dry place for up to six years.
